KW's Easy Peasy Potato Salad



Hello there my peoples!

Today  I thought I 'd do something a bit different.

As most of my friends and family know, I love potato salad.  It's my favorite comfort dish, but I have to admit, I don't do well in the seasoning department when I make it myself.  But I had a sudden brainstorm tonight and it turned out delish!

Are you ready?

Here we go!

KW's Easy Peasy Potato Salad



8 medium potatoes
1 6 oz can of black olives
5 hard boiled eggs
1 1/2 cups Miracle Whip
1 McCormick Gourmet, Herbes de Provence Roasted 
Chicken & Potatoes seasoning mix  (1.25 oz packet)


Step One:
Microwave your potatoes.  That's right.  Forget the watery pan and nuke those babies.  But don't leave them in the entire time, only cook them until a fork goes in easy.  Remove them from the microwave and let them sit, unpeeled, on a plate.  They will continue to cook while you mix the rest.


Step Two:
Drain your olives and slice them thin.  Also, slice your hard-boiled eggs thin.  For the eggs, I cut them lengthwise, then turn them and slice them lengthwise again.  You should have 4 sections.  Then slice those the opposite into small slices.  Toss both into a large mixing bowl.


Step Three:
In a separate bowl, whisk your Miracle Whip and your seasoning packet together until well blended.  This is the 'magic' step.  In one little seasoning packet is the secret to a perfectly balanced flavor infusion!  I'm not kidding.  No.  Really.  I AM NOT KIDDING!!  Even though the packet says it's for Chicken & Potatoes, ignore that and rest in the knowledge that you don't need no stinking chicken! 

 (even though I used this packet, there are multitudes of flavors to choose from at the store.  Pick whatever your heart desires.)

Put this in the fridge for a bit.


Step Four:
Take those sitting potatoes and run cold water over them until you are able to hold them in your hand without requiring medical attention.  Seriously.  Take it from a kitchen klutz, you don't want the attention of anyone in the medical field.  Trust me. Peel them (a peeler can be used, but I prefer to use a knife since the potato is soft) then cut them into small bite-sized chunks and toss these into the bowl with the olives and eggs.  

IMPORTANT:  Let them sit until completely cool.  Unless you like mushy potato salad, which I most definitely do not, let them sit.  They like to sit.  I promise they do.


Step Five:
Now it's time to mix it all together.  Get the seasoned Whip out of the fridge and dump it on top of your completely cooled potatoes.  Gently mix the entire contents of the bowl with a large spoon.  Don't mix too hard or you'll end up with mashed taters instead of chunky bites of goodness.

Once your potato salad is mixed you can either leave it in the bowl, or as I like to do, transfer it into a pretty serving dish.  Plunk the lid on and put it in the fridge until cold.  
This recipe makes about 8 cups.

I know, I know, easy right?  Who knew pre-mixed seasoning packets would turn out to be so awesome? 

Now you have the perfect addition to your next barbecue, or a great late night snack while you're watching an episode of Star Trek.  Whatever your mood, there's nothing like a bowl of awesomeness to experience it with.
