KW's Ultimate Chicken Salad



Are you ready for the best Chicken Salad you've ever tasted?  Well, here you go!  It's chock full of yummy fresh vegetables and a surprising twist, guaranteed to please your palate!  Just ask my son, he tested it and heartily approved!




Ingredients

3-4 Chicken Breasts, cooked and shredded
2 Celery Stalks, diced small (1/2 cup)
3-4 Radishes, diced small (1/2 cup)
1 cup diced Mushrooms
1 cup Black Olives, sliced thin
1 tbs Celery Salt
1/2 tbs Salt
1/2 tsp Pepper
1-1/2 cups Miracle Whip
5 tbs Honey

Optional:

  • Fresh Spinach Leaves (washed, dried and stems removed)
  • Tomatoes, sliced thin
  • Bread / Rolls, your choice


Servings - makes 4-6 cups


Step One

Cook and shred your chicken into a large bowl.. I always cook my chicken in the crockpot because it makes it super tender and juicy, but you can cook it anyway you like.

Step Two

Slice and dice all your veggies.  Add to your chicken.

Step Three

In a separate bowl combine your Miracle Whip, your spices and your honey.  Blend well.  Then add to your chicken/veggies and mix thoroughly.

  • Note:  I realize that honey seems like an odd addition to this, but here's what happened.  I accidentally oversalted the chicken salad.  Yes.  It's true.  I did not mean to add so much salt!  After tasting it, I did a quick search on the internet to find a solution to the saltiness and came up with three suggestions:  to add sugar, apple cider vinegar or honey 1 tablespoon at a time until it tastes good.  I chose the honey and I am so very glad I did! 


Step Four

Toast your bread, add a layer of fresh spinach leaves (with stems removed) and sliced tomatoes.  Serve with chips and a dill pickle slice and enjoy!
