Okay, I have a confession to make. I normally do not like pasta salad of any kind. It's either too dry, or too...well, noodly for my taste. But I decided to experiment and oh boy am I glad I did! I hope you enjoy this as much as I do.
Ingredients
2 Cups Elbow Macaroni, cooked to your desired texture
1 16 oz Can Olives, sliced (I prefer jumbo size)
1 16 oz Can Petite Diced Tomatoes, drained and rinsed
1 Pkg McCormick Gourmet Creamy Parmesan & Sun Dried Tomato Chicken Penne Seasoning Mix
1/3 Cup Miracle Whip
2/3 Cups Extra Virgin Olive Oil
Step 1
Cook your pasta. I chose elbow macaroni, but you can use whichever you prefer. When it's cooked to your preferred texture, whether soggy or firm, drain and rinse with cold water. Set aside.
Step 2
Slice your olives and drain your tomatoes. Make sure you rinse your tomatoes until they're clean, toss them into the same bowl as your noodles.
Step 3
Mix your Seasoning Mix, Miracle Whip and Olive Oil with a whisk. Add to the bowl with the noodles, tomatoes and olives; mix it all together. Cover tightly and let it sit in the fridge until cold. Serve with your favorite chicken dish, or turkey burger, or whatever your heart desires!
*Note: If you find that you don't care for the Seasoning Mix I've used, then choose another. There's lots to choose from.
