Quinoa Lettuce Wraps



As promised, this is the second recipe in my Quinoa 3-part series. 

I love lettuce wraps!  What a fantastic addition to any meal!  They can be an appetizer, a side dish, or the main event!  I got this idea from P.F. Changs, who by the way, have awesome lettuce wraps! But I got to thinking that there must be a way for me to make some that are just as yummy and low-cal to boot, and with my love for Quinoa (I have mentioned my love for this nutty grain, haven't I?) my version was born!

On with the recipe!



Ingredients

Quinoa Stir Fry - (click the link for the recipe)
1 Bottle of Lawry’s Teriyaki with Pineapple Sauce
1 Head of Lettuce


This is very simple!  I promise.  Here we go...


Step 1

Make your Quinoa Stir-Fry and plop it into a large (and I mean LARGE) frying pan.  


Step 2

Add your Teriyaki sauce.  I would start out with 3/4 of the bottle, then add more to taste.  Heat thoroughly!

*Note:  If you don't care for Teriyaki, Lawry's makes a great selection of bottled marinades to choose from.  Or you can add soy soyce (yuck!  Oops, did I say that out loud?)


Step 3

Cut your head of lettuce in half and then carefully separate the layers.  I have to admit, I am a bit leaf-peeling challenged.  For the life of me I have yet to peel my lettuce apart in uniform sizes.  But as long as they are large enough to allow them to scoop the Stir-Fry then it's okay.  ha ha


Step 4

Fill your lettuce and enjoy your Lettuce Wraps, rejoicing in the fact that you have just served your family a yummy alternative to fatty burrito's and hamburgers!
